Aloo Ka Raita is a traditional Dera Ismail Khan recipe, a province now in Pakistan. Though, I am sure lot of other regions would like to stake a claim to this wonderful and simple recipe. I have fond memories of my mother & grandmother making aloo ka raita regularly in Summers especially with hot dishes on the table. The idea behind raitas is simple. They keep your body and mind cool. I usually add milk to curds. This dilutes them and if curds are a bit sour, milk reduces the sourness. Raitas by tradition are an essential condiment on Punjabi tables. Cheese Masala Omelette Here is the simplest possible recipe for a cheese masala omelette. It is no fuss, simple to make and awesome way to start your day. It doesn’t use powdered spices so you can be rest assured about spice levels. This cheese masala omelette recipe uses ghee. I am replacing my cooking oils with ghee for its obvious benefits. However, you can use your preferred cooking medium, vegetable oils or even butter for this recipe. It doesn’t need grated cheese so that is a task avoided. However, if you wish you can always grate in some cheddar. I pair this two egg cheese masala omelette with three slices of toasted brown bread. You can replace brown bread with the bread of your choice. Feel free to modify the recipe and adapt it to your tastes. Adding bread ensures I do not have craving for more food till it is time for lunch.
